Say Cheese

Chef Teddy’s pimento cheese recipe is a decadent and evocative taste of our Lowcountry heritage. Savor a taste of Timbers Kiawah from home with our quick-and-easy recipe.
Ingredients:
1 cup pimentos, diced
1-lb. cheddar cheese,shredded
1 cup mayonnaise
½ cup cream cheese, softened
1 tbsp. dried chili flakes
½ tsp. salt
12 crostini
Directions:
In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chili flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 ½ minutes. Transfer the pimento cheese to a container and refrigerate for 24 hours. Serve cold with crostini.
