Chef Teddy shares his favorite fall dish, Grilled Oysters with “Pumking” Pumpkin Ale Butter, which pairs perfectly with a Maple Old Fashioned.


Ingredients
24 Oysters, Shucked on Half Shell
½ Lb Butter, Softened
6 Oz Pumking, Southern Tier Brewing Company
1 Ea Cinnamon Stick
1 Ea Lemon, Zest and Juice
1 Ea Shallot, Small Diced
1 Tbsp Minced Garlic
1 Tbsp Fresh Tarragon, Chopped
2 Tbsp Fresh Sage, Chopped
½ Tsp Cup Chili Pepper Flakes

Directions
Heat up 2 saucepans. Set the first pot to medium heat, add ¼ of the butter. When the butter is fully melted, add in the garlic and shallots. Reduce heat to medium low and cook until the garlic and shallots have softened, and the raw garlic odor has subsided. Put aside. Set the second pot to medium heat and add in the Pumpking, cinnamon stick, lemon juice, and lemon zest and reduce in half. Add tarragon, sage, and chili pepper flakes, and reduce to a syrup. Combine the cooked shallots and garlic, the butter, and beer reduction, season with salt and pepper, and place into the refrigerator for an hour. Fire up the grill! Once hot, add the oysters, shell side down, on the grill, and add about 2 teaspoons of butter right on top of each oyster. Close the grill and cook for 7-10 minutes. (depending on the size of the oyster)
